Jacob’s Chili

In January of 2010, Gant asked Jacob Cloud to make a video about one of his chili recipes. I realized that because of a technical issue, the videos were removed from the post, and wanted to re-post them. The videos are entertaining and educational, but look how young and beardless ol’ Jacob looks. 

Make some Texas Chili this weekend. To help with this, Jacob Cloud has sent in a video. This video has everything: history, training, Texas beer, mild hazing, and skillet corn bread! Yes!

Here is his recipe list:
2 lbs course ground beef
2.5 lbs tri-tip, trimmed and cubed
1 can peeled whole tomatoes
1 can Rotel
1-2 minced jalapenos (more or less depending on how spicy you want it)
4-5 crushed/minced garlic cloves
1/2-1 cup chopped white onion
1/4-1/2 cup chopped cilantro
Lime juice from 1 large lime
Thickener (corn starch, masa, flour, etc)
6 pack of Texan beer

Chili Mix (all measurements heaping!):
2-3 tbsp chili powder
1+ tbsp cumin
1 tsp ancho chili powder
1 tsp chipotle chili powder
1 tsp paprika
1 tsp cayenne
1 tsp Mexican oregano leaves
1-2 tsp black pepper (to taste)
1-2 tsp salt (to taste)

  1. Ah, the video that introduced me to the glory of Rotel and ancho chili powder. I’ve made this at least 5 times since this was posted. Only variation is I wait until there is only an hour left to add the onions. This recipe can’t be beat.

  2. I usually go 2 lbs coarse ground beef and 2 lbs (ground) Italian sausage.

    And more like 7-8 tbs chili powdah.

    And a stick of butter (assuming the meat is pre-cooked / quickly drained).

    But hey, ANY chili without beans is good chili. I love food, love to cook and would enjoy more recipe / food posts.

  3. Agreed. More recipes would be great. I just got a slow cooker and tried that spicy bourbon pork one Justin did a while back. It was pretty fantastic.

  4. I just made this on Monday with some variations and it was outstanding. Definitely need to have the cornbread with it (I made “northern” corn bread using a different recipe but I am from the north and it was delicious).

  5. I totally want to try this recipe.
    On another note, how does one get rid of exertion headaches? I’ve been moving around and Monday was the first time I’ve lifted in about a month. The base of my skull and directly behind my ears felt like I was getting a neck massage from satan. I’ve been having them through out the week then the same thing happened on Wednesday but it got so bad the pain radiated to my forehead. It hurt so bad.

  6. I just tried to go run to get up to snuff for my PT test and my neck and base of skull started to flare up. It gave me a small headache even. It hurts when I bench, pushups, pullups, overhead press. It sucks. I think I’m dying.
